Citrus Tart: A Slice of Sicilian Sunshine
A bright and fragrant tart filled with homemade orange or mandarin marmalade, set in a lemon-and-honey shortcrust pastry.

- โ 150 g margarine (or butter)
- โ 80 g caster sugar
- โ 1 egg
- โ 1 egg yolk
- โ 1 tablespoon honey
- โ Zest of 1 lemon
- โ 250 g homemade orange or mandarin marmalade
- โ A pinch of salt

Sift the flour onto a board, make a well, then add softened margarine, a pinch of salt, sugar, honey, two yolks and grated lemon zest.

Work the dough quickly to keep it cool. Once smooth, wrap it in cling film and chill in the fridge for 1 hour.

Roll out two-thirds of the dough and line a tart tin lined with baking parchment.

Prick the base with a fork and spread the marmalade in an even layer.

Cut 1 cm strips from the remaining dough and arrange them in a lattice pattern over the tart.

Brush with lightly beaten egg white and bake in a conventional oven at 190ยฐC for 30โ35 minutes, until golden.
