Pasta with Radicchio and Sausage: A Hearty Sicilian Classic

- ✓ 250g Sicilian fennel sausage
- ✓ 250g red radicchio
- ✓ 2 golden onions
- ✓ Half a glass of red wine
- ✓ 100g grated Sicilian Pecorino cheese (DOP)
- ✓ Extra virgin olive oil, to taste
- ✓ Salt and freshly ground black pepper, to taste
