Classic Sicilian Clam Pasta: A Taste of the Sea

- ✓ 1 kg fresh clams
- ✓ half a glass of dry white wine

- ✓ salt, to taste
- ✓ freshly ground black pepper

Soak the clams in salted water for 2 hours, then rinse thoroughly under running water to remove any sand.

Place them in a large pan, cover with a lid, and cook over a high heat for 2–3 minutes, adding the white wine.

As the clams open, remove them from the pan, straining the cooking liquid through a fine sieve and set it aside.

In a wide frying pan, gently sauté the whole or chopped garlic in plenty of extra virgin olive oil, being careful not to let it burn.

Add the clams along with some of the strained cooking liquid, season with chopped parsley and a good grind of black pepper.

Cook the pasta in plenty of salted water until just al dente, then drain and toss it in the pan with the clams.

Give everything a quick toss over a high heat for 1–2 minutes, adding a splash of the pasta cooking water if needed to create a silky sauce.

Finish with extra chopped parsley and a drizzle of olive oil. Serve immediately.
💡 Tips and Variations
For a ‘red’ twist, add a few halved cherry tomatoes. If you like a bit of heat, throw in a pinch of chilli flakes when frying the garlic.

- • Clam pasta is best enjoyed fresh. You can keep leftovers in the fridge for up to one day, but it really shines when served straight away.
- • Avoid freezing it, as this can affect the texture of the clams.
