- ✓ 200 g stale bread, crumbled
- ✓ 2 eggs
- ✓ 50 g diced caciocavallo
- ✓ 50 g Pecorino Siciliano PDO, grated
- ✓ 1 garlic clove, finely chopped
- ✓ Extra-virgin olive oil (for frying)
- ✓ Salt
- ✓ Freshly ground black pepper

Wash the spinach thoroughly and boil for about 5 minutes in salted water. Drain well and squeeze to remove excess moisture.

In a large bowl, combine the crumbled bread, cooked spinach, eggs, grated pecorino, diced caciocavallo and chopped garlic. Season with salt and pepper.

Mix until you have a uniform mixture, then shape small fritters with your hands.

Heat plenty of olive oil in a non-stick pan and fry the fritters until evenly golden.

Drain on kitchen paper to remove excess oil, then serve warm or slightly cooled.
💡 Tips and Variations
For a lighter version, bake the fritters in a fan oven at 180°C for 20 minutes, turning halfway.
You can replace part of the bread with mashed boiled potatoes for an even softer interior.

- • Store in an airtight container in the fridge for up to 3 days.
- • Reheat in a pan or oven to restore crispness. They can also be frozen and reheated straight from the freezer.
