Insalata Vastasa: A Flavour-Packed Palermitan Summer Salad
A refreshing Sicilian summer salad bursting with new potatoes, green beans, tomatoes and olives โ perfect for a sunny day in Sicily.

- โ 200g green beans
- โ 1 red onion
- โ 250g tomatoes or cherry tomatoes
- โ 100g green and black olives
- โ dried oregano, to taste
- โ extra virgin olive oil, to taste
- โ white wine vinegar, to taste
- โ Trapani sea salt
- โ freshly ground black pepper
