👨🍳 Preparation
- 1
On a lightly floured surface, roll out the risen bread dough and brush lightly with extra virgin olive oil.
- 2
Fold it over and knead vigorously for a few minutes until the dough is elastic and springy.
- 3
Roll out to about half a centimetre thick and cut into 10cm squares.
- 4
On half of the squares, place a few cubes of primo sale, some chopped olives, and anchovy pieces.
- 5
Cover with the remaining squares and press the edges firmly together with your fingers or a fork to seal.
- 6
Heat plenty of vegetable oil in a wide pan to about 170°C.
- 7
Fry the pizzas in batches until golden brown, turning them to cook evenly on all sides.
- 8
Drain on kitchen paper and serve warm, preferably alongside a good glass of Sicilian red wine.
💡 Tips and Variations
For a more Mediterranean twist, add sun-dried tomatoes or capers to the filling. Alternatively, try a sweet version filled with ricotta and drizzled with honey!
📦 Storage
- • Store leftover fried pizzas in an airtight container at room temperature for up to one day.
- • Reheat in the oven at 180°C for 5-10 minutes to restore their crispiness.
- • You can also freeze them cooked and reheat in the oven when needed.
🍷 Pairing
These Enna fried pizzas pair beautifully with a glass of Delia Nivolelli Syrah – a red wine boasting spicy aromas and balanced flavours that perfectly complement the salty filling.
